Did you know the vegetable you are about to enjoy is actually processed when it is fresher than the corn available from many farmers' stands? Farm stand and other fresh produce is often harvested many days before you prepare it. We move our produce from field to freezer quickly (usually within eight hours) and lock in the nutrients and flavor that vegetables retain only during the first few hours after harvesting. It would be easier if we took more time: however one of the Cope traditions, like that of many others in the Pennsylvania Dutch country, has been to serve the sweetest and most tender vegetables around.
